It depends.
Default logging configuration on recent Linux distros can be chain of
stderr of process started by systemd (service unit) -> journald -> syslog
Yes, that's really confusing and I always have to explain this stuff in detail to my customers. But these OS-specific aspects are IMHO somewhat beyond the scope of OpenLDAP docs.
