I see that NTLM is supported as an authentication mechanism for supportedSASLMechanisms, but I'm not seeing any docs. Do I configure GSSAPI and NTLM is now available?

NTLM has been obsoleted and shouldn't be used at all. SASL/GSSAPI or SASL/GSS-SPNEGO should be fine.
