Is there a configuration flag I can use to allow me to define memberOf in the schemas, rather than having it be a 'built-in' of OpenLDAP.

No. What are you attempting to do?
I would say though, as long as you don't *load* the memberOf module, you could define and include your own schema that defines that attribute and assign it to an objectClass, etc.
