I use OpenLdap with the dynamic configuration (directory slapd.d) I can modify the oclLogLevel of the cn=config entry but it seems that there is no effect on the traces printing.
Is something wrong in my configuration?

No, that's the proper way to modify loglevel, you should check your syslog configuration.

*How* did you modify olcLogLevel? Did you edit the ldif in the slapd.d directory, or did you make a change over LDAP (e.g. ldapmodify) ?
The first you should never do, then second should have worked.
