It was a misconfiguration...
It works fine with the config:
Slapd.conf database ldbm suffix "o=abc,c=fr" suffix "o=def,c=fr"
Ldiff: dn: o=abc, c=fr o:def objectclass: top objectclass: organization
dn: o=def, c=fr o:def objectclass: top objectclass: organization
